This Keto Peanut Butter Cookie recipe is SO easy and only has 5 ingredients that I guarantee you already have in your kitchen right now. I love these cookies so much that I make them on a weekly basis! I have an extreme sweet tooth so if I have a dessert craving at night these are what I reach for. You can easily alter this recipe to make it your own and try to incorporate so many different mix ins other than chocolate chips.
5 Ingredient Keto Peanut Butter Cookies
¼ cup Truvia Brown Sugar
3/4 cup of Peanut Butter
1/4 cup of melted Butter
Lily’s No Sugar Added Chocolate Chips
1. Mix brown sugar and melted butter until combined.
2. Add the egg and continue to mix.
3. Add in peanut butter and mix until dough becomes crumbly.
4. Add in mix ins as desired! I love using Lily’s No Sugar Added Chocolate Chips.
5. Form cookies on a cookie sheet and bake at 350 °F until golden brown (~10 - 12 minutes). Be careful to not overbake!
6. Let sit for 5-10 minutes then enjoy!
It is very important to follow this recipe exactly. If you mix these ingredients all together at once, then the cookie texture doesn’t turn out exactly right. Also make sure to watch the cookies very closely while in the oven so you don’t overbake them. As soon as the cookies start turning golden brown then take them out of the oven.
They will still appear ‘squishy’ and not completely baked but after letting them sit for 5-10 minutes they form/stiffen. I also sometimes will not mix the chocolate chips into the dough but rather place 3-5 chips onto the cookies after I form them on the cookie sheet.
It just depends on if I want some plain peanut butter cookies as well as chocolate chip! 😊 You can also use regular brown sugar + chocolate chips if you aren’t watching sugar intake.
